 But my previous easy  Cottage Cheese Cookie Dough Recipe with a few ingredients is also very delicious.

  • Coconut oil: Keeps the cookies moist.
  • Vanilla protein powder: Adds extra protein and vanilla flavor.
  • Chocolate chips: Use your favorite brand dark chocolate chips sweetened with stevia are a good low-sugar option.

This cottage cheese cookie recipe is simple and easy.

  • Preheat: Set your oven to 350°F and line a baking sheet with parchment paper.
  • Blend: In a blender, add cottage cheese, maple syrup, and vanilla. Blend until smooth.
  • Mix: In a bowl, combine almond flour and protein powder. Add the blended mixture and coconut oil, then stir until combined. Fold in chocolate chips.
  • Shape: Scoop the dough onto the baking sheet with a cookie scoop. Flatten the cookies slightly with your hands.
  • Bake: Top with extra chocolate chips. Bake for 15-16 minutes or until the bottoms are golden brown.
  • Cool: Let the cookies cool on the baking sheet for a few minutes, then transfer to wire racks to cool completely.

  • Coconut Oil: Can be replaced with melted butter, olive oil, or avocado oil.

Possible Reasons:

  • Protein Powder: Different protein powders vary in absorbency. Some might not absorb moisture as well as others.
  • Cottage Cheese: The brand and type of cottage cheese matter. Some are more liquid. Using a drier cottage cheese can help. Good Culture and Trader Joe’s small curd 4% milkfat cottage cheese work well.

  • If your dough is too runny, add 1/4 to 1/2 cup more almond flour.
  • Testing with 2 cups of almond flour and 1/4 cup protein powder has been successful.
