Ingredients Hobnob Cookies
- 🧈 8 ½ tablespoons (125g / 4oz) unsalted butter
- 🍬 ⅓ cup (80g / 3 oz) brown sugar
- 🍯 2 tablespoons golden syrup
- 🌾 ⅔ cup (100g / 3½ oz) porridge oats
- 🌾 ⅔ cup (100g / 3½ oz) wholemeal flour
- 🧂 ½ teaspoon baking soda
- 🧂 ½ teaspoon baking powder
- 🧂 ½ – 1 teaspoon sea salt, to taste
- 🍫 ⅔ cup (100g) chocolate
- 🧈 2 tablespoons (30g / 1 oz) unsalted butter (for melting with chocolate)
Instructions Hobnob Cookies
Preheat the Oven 🔥
Preheat your oven to 350°F (180°C) and line a few trays with parchment paper.
Cream Butter and Sugar 🧈🍬
Use a hand or stand mixer to cream the butter and brown sugar until the mixture is pale, fluffy, and smooth.
Add Golden Syrup 🍯
Beat in the golden syrup until fully incorporated.
Mix Dry Ingredients 🌾🧂
On low speed, mix in the oats, flour, baking soda, baking powder, and salt until combined.
Chill the Dough ❄️
Shape the dough into a ball, wrap it in cling wrap, and refrigerate for 15-20 minutes.
Shape the Cookies 🍪
Roll the dough into small balls, about a tablespoon each, and flatten them on the tray to about 2 inches in diameter. Leave space between them for spreading.
Bake 🍪🔥
Bake for 10-12 minutes until golden brown, then let them cool on the trays.
Melt the Chocolate 🍫
Melt the chocolate and butter together in a heatproof bowl over simmering water or in the microwave.
Top with Chocolate 🍫🍪
Spoon a teaspoon of melted chocolate onto each cookie and spread evenly with the back of a spoon.
Create the Hobnob Swirl 🍪
Once the chocolate has slightly set, swirl a spoon across the chocolate in a figure-eight pattern to create the classic Hobnob look.
