Instruction
Step 1: heat the oven
Preheat your oven to 350°F/175°C and line a baking sheet with parchment paper. To really get that citrus flavor, we want to release the oil from the zest into the sugar.
Step 2: combine ingredients
In a large bowl, combine the melted butter with the sugar – whisk until well combined.
Step 3: add wet ingredients
Add the eggs, lemon juice, lemon extract, and vanilla to the batter. Stir well.
Step 4: add ingredients to cookie dough
Add to the cookie dough mixture. Mix until just combined.
Step 5: add blueberry
Gently mix in the frozen blueberries. Be careful not to mix here over. Try whole blueberries.
Step 6: shape the cookies
Scoop cookie dough into cookie dough balls and arrange on a quarter sheet pan. Cover with plastic wrap and refrigerate the dough for 30-60 minutes.
Step 7: bake the cookies
Once the dough is chilled, bake the cookies on a parchment-lined sheet pan at 350° for 8-10 minutes.
Step 8: drizzle the cookies
While the cookies are baking, make the lemon glaze. Drizzle the baked cookies with the lemon glaze.
Step 9: store cookies
Allow the glaze to set until dry. Store baked cookies in an airtight container for 1-2 days.
Make sure your blueberries are nice and frozen before adding them to the cookie dough.

340 calories in lemon cookie blueberry recipe.
Can I use lemon juice instead of lemon extract?
You should use both lemon juice and lemon extract for the recipe because this combination creates a strong lemon flavor in the cookies. In general, lemon extract has a stronger lemon flavor than lemon extract and you should not use lemon juice instead of lemon extract if a recipe calls for lemon extract.
What is the role of lemon juice in baking?
You can commonly find it in vanilla extract, almond extract, and other citrus extracts. Many recipes call for lemon extract without making the final dish tart or diluting the milk component with the acid of pure lemon juice.
