Ingredients:

  • 3 large English Cucumbers (approx. 2 lbs / 900g), sliced into rounds
  • 1 medium White Onion (approx. 6 oz / 170g), thinly sliced
  • 2 cups Apple Cider Vinegar
  • 1 cup Granulated Sugar
  • 2 tbsp Kosher Salt
  • 1 tbsp Mustard Seeds
  • 1 tsp Celery Seeds
  • 1 tsp Black Peppercorns
  • 1/4 tsp Turmeric Powder

Instructions:

  1. Slice the English cucumbers and white onion into thin, uniform rounds.
  2. Distribute the vegetables evenly between four 16 oz mason jars, alternating between cucumber and onion slices.
  3. Combine the apple cider vinegar, granulated sugar, kosher salt, mustard seeds, celery seeds, peppercorns, and turmeric powder in a medium saucepan.
  4. Heat the mixture over medium-high heat, stirring occasionally, until the sugar and salt have completely dissolved.
  5. Bring the brine to a gentle simmer, then remove from heat.
  6. Carefully pour the hot brine over the vegetables in each jar, ensuring they are completely submerged.
  7. Use a slotted spoon to press down any floating slices to ensure full immersion.
  8. Seal the lids tightly and allow the jars to cool to room temperature on the counter before transferring them to the refrigerator to chill for 24 hours.
