- 2 cups Apple Cider Vinegar
- 1 cup Granulated Sugar
- 2 tbsp Kosher Salt
- 1 tbsp Mustard Seeds
- 1 tsp Celery Seeds
- 1 tsp Black Peppercorns
- 1/4 tsp Turmeric Powder
Instructions:
- Slice the English cucumbers and white onion into thin, uniform rounds.
- Distribute the vegetables evenly between four 16 oz mason jars, alternating between cucumber and onion slices.
- Combine the apple cider vinegar, granulated sugar, kosher salt, mustard seeds, celery seeds, peppercorns, and turmeric powder in a medium saucepan.
- Heat the mixture over medium-high heat, stirring occasionally, until the sugar and salt have completely dissolved.
- Bring the brine to a gentle simmer, then remove from heat.
- Carefully pour the hot brine over the vegetables in each jar, ensuring they are completely submerged.
- Use a slotted spoon to press down any floating slices to ensure full immersion.
- Seal the lids tightly and allow the jars to cool to room temperature on the counter before transferring them to the refrigerator to chill for 24 hours.
