Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (12g) fresh Key lime zest
  • 1 tbsp (15ml) fresh Key lime juice
  • 2 cups (250g) all-purpose flour
  • 2 tsp (6g) cornstarch
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) fresh Key lime juice
  • 1 tsp (2g) Key lime zest
  • 1 tsp (5ml) milk

Instructions:

  1. In a large bowl, beat the softened butter, brown sugar, and granulated sugar on medium-high for 2-3 minutes until pale and fluffy.
  2. Mix in the egg, vanilla extract, lime zest, and lime juice until the batter is smooth and fragrant.
  3. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
  4. Gradually add the flour mixture to the wet ingredients on low speed, mixing only until the white streaks of flour disappear.
  5. Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto parchment-lined sheets, spacing them 2 inches apart.
  6. Bake for 8 to 10 minutes. Remove from oven when edges are barely set but centers still look slightly underdone.
  7. Whisk together powdered sugar, lime juice, lime zest, and milk to create a glaze, then apply to cooled cookies.
