Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) light brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1 large egg, room temperature
- 1 tsp (5ml) vanilla extract
- 2 tbsp (12g) fresh Key lime zest
- 1 tbsp (15ml) fresh Key lime juice
- 2 cups (250g) all-purpose flour
- 2 tsp (6g) cornstarch
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) fresh Key lime juice
- 1 tsp (2g) Key lime zest
- 1 tsp (5ml) milk
Instructions:
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar on medium-high for 2-3 minutes until pale and fluffy.
- Mix in the egg, vanilla extract, lime zest, and lime juice until the batter is smooth and fragrant.
- In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
- Gradually add the flour mixture to the wet ingredients on low speed, mixing only until the white streaks of flour disappear.
- Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough onto parchment-lined sheets, spacing them 2 inches apart.
- Bake for 8 to 10 minutes. Remove from oven when edges are barely set but centers still look slightly underdone.
- Whisk together powdered sugar, lime juice, lime zest, and milk to create a glaze, then apply to cooled cookies.
