Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 2 tbsp (25g) granulated sugar

Instructions:

  1. Cream the softened butter and 3/4 cup granulated sugar together using an electric mixer until light and fluffy.
  2. Beat in the egg and vanilla extract until the mixture is smooth and velvety.
  3. Gradually stir in the all-purpose flour, baking powder, and salt until a stiff dough forms.
  4. Turn the dough onto a lightly floured surface and roll to 1/4 inch thickness.
  5. Use cookie cutters to create shapes, then roll each cutout in the remaining 2 tablespoons of granulated sugar.
  6. Place cookies on a parchment-lined baking sheet and bake at 350°F (175°C) for 8–10 minutes until the edges turn a light mahogany color.
  7. Allow cookies to cool on the pan for 5 minutes to set the structure, then transfer to a wire rack to fully crisp up.
