Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) salt
- 2 tbsp (25g) granulated sugar
Instructions:
- Cream the softened butter and 3/4 cup granulated sugar together using an electric mixer until light and fluffy.
- Beat in the egg and vanilla extract until the mixture is smooth and velvety.
- Gradually stir in the all-purpose flour, baking powder, and salt until a stiff dough forms.
- Turn the dough onto a lightly floured surface and roll to 1/4 inch thickness.
- Use cookie cutters to create shapes, then roll each cutout in the remaining 2 tablespoons of granulated sugar.
- Place cookies on a parchment-lined baking sheet and bake at 350°F (175°C) for 8–10 minutes until the edges turn a light mahogany color.
- Allow cookies to cool on the pan for 5 minutes to set the structure, then transfer to a wire rack to fully crisp up.
