Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1/4 cup (50g) granulated sugar
  • 1 cup (125g) all-purpose flour
  • 1/4 tsp (1.5g) salt
  • 1 1/2 cups (180g) pecan halves, roughly chopped
  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) packed light brown sugar
  • 1/2 cup (120ml) light corn syrup
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1/4 tsp (1.5g) salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a 9x9 inch square baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, stir together the melted butter, granulated sugar, salt, and flour until a soft dough forms.
  3. Press the dough firmly and evenly into the bottom of the prepared baking pan.
  4. Bake the crust for 10–12 minutes or until the edges are barely golden, then remove from the oven and let cool slightly.
  5. In a large bowl, whisk together the melted butter, brown sugar, and corn syrup until smooth.
  6. Beat in the eggs one at a time, then stir in the vanilla extract and salt.
  7. Fold in the chopped pecans until they are thoroughly coated in the caramel mixture.
  8. Pour the pecan filling over the pre-baked shortbread crust and spread evenly with a spatula.
  9. Bake for 20–25 minutes until the edges are bubbling, the top is mahogany-gold, and the center has a slight jiggle.
  10. Remove from the oven and cool completely in the pan before slicing.
