Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 1/4 cup (50g) granulated sugar
- 1 cup (125g) all-purpose flour
- 1/4 tsp (1.5g) salt
- 1 1/2 cups (180g) pecan halves, roughly chopped
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) packed light brown sugar
- 1/2 cup (120ml) light corn syrup
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) salt
Instructions:
- Preheat the oven to 350°F (175°C) and line a 9x9 inch square baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, stir together the melted butter, granulated sugar, salt, and flour until a soft dough forms.
- Press the dough firmly and evenly into the bottom of the prepared baking pan.
- Bake the crust for 10–12 minutes or until the edges are barely golden, then remove from the oven and let cool slightly.
- In a large bowl, whisk together the melted butter, brown sugar, and corn syrup until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract and salt.
- Fold in the chopped pecans until they are thoroughly coated in the caramel mixture.
- Pour the pecan filling over the pre-baked shortbread crust and spread evenly with a spatula.
- Bake for 20–25 minutes until the edges are bubbling, the top is mahogany-gold, and the center has a slight jiggle.
- Remove from the oven and cool completely in the pan before slicing.
