Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 tsp (5ml) vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/2 tsp (3g) baking powder
  • 1/4 tsp (1.5g) salt
  • 1 tsp (5ml) Royal Blue gel food coloring
  • 1 tsp (5ml) Super Red gel food coloring
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) heavy cream
  • 10 large candy eyeballs
  • 5 orange butterscotch discs
  • 5 mini chocolate chip cookies

Instructions:

  1. Cream the softened butter and sugar until the mixture is pale and fluffy. Beat in the egg and vanilla extract until fully emulsified.
  2. In a separate bowl, whisk together flour, baking powder, and salt. Gradually incorporate the dry ingredients into the wet until a smooth, non-sticky dough forms.
  3. Divide the dough into two equal halves. Fold royal blue gel coloring into one half and super red gel coloring into the second half until colors are uniform and deep.
  4. Scoop 2-tablespoon portions and roll into balls. Place on a parchment-lined sheet, leaving 2 inches of space. Bake at 350°F (175°C) for 10-12 minutes. Let them cool completely on the pan.
  5. Whisk powdered sugar and cream into a thick frosting. Divide frosting into two bowls and tint with blue and red dyes.
  6. Pipe a generous mound of frosting on each cookie. For Cookie Monster, use a toothpick to create a furry texture; for Elmo, smooth the top. Add eyes and the butterscotch nose or mini cookie accessories immediately.
