Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large egg
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1/2 tsp (3g) baking powder
- 1/4 tsp (1.5g) salt
- 1 tsp (5ml) Royal Blue gel food coloring
- 1 tsp (5ml) Super Red gel food coloring
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) heavy cream
- 10 large candy eyeballs
- 5 orange butterscotch discs
- 5 mini chocolate chip cookies
Instructions:
- Cream the softened butter and sugar until the mixture is pale and fluffy. Beat in the egg and vanilla extract until fully emulsified.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually incorporate the dry ingredients into the wet until a smooth, non-sticky dough forms.
- Divide the dough into two equal halves. Fold royal blue gel coloring into one half and super red gel coloring into the second half until colors are uniform and deep.
- Scoop 2-tablespoon portions and roll into balls. Place on a parchment-lined sheet, leaving 2 inches of space. Bake at 350°F (175°C) for 10-12 minutes. Let them cool completely on the pan.
- Whisk powdered sugar and cream into a thick frosting. Divide frosting into two bowls and tint with blue and red dyes.
- Pipe a generous mound of frosting on each cookie. For Cookie Monster, use a toothpick to create a furry texture; for Elmo, smooth the top. Add eyes and the butterscotch nose or mini cookie accessories immediately.
