Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) packed brown sugar
- 1/4 cup (50g) granulated sugar
- 1 large (50g) egg
- 1 tsp (5ml) vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 1/2 cups (255g) semi-sweet chocolate chips
- 24 (approx. 20g) candy eyeballs
- 2 oz (56g) semi-sweet chocolate, melted
Instructions:
- Beat the softened butter, brown sugar, and granulated sugar until the mixture looks pale and fluffy.
- Add the egg and vanilla extract, beating on medium speed until fully incorporated.
- Fold in the flour, baking soda, and salt. Mix only until the white streaks of flour disappear.
- Stir in the chocolate chips by hand to ensure even distribution.
- Roll the dough into 1-inch balls (about 1 tbsp each).
- Place on parchment-lined sheets, spacing them 2 inches apart.
- Bake at 375°F (190°C) for 8–10 minutes until edges are mahogany-gold and centers look slightly underbaked.
- Let the cookies rest on the hot pan for 5 minutes.
- Press one or two candy eyeballs into the top of each slightly warm cookie.
- On cooled cookies, place a chocolate chip in the center and use a piping bag with melted chocolate to draw 8 thin legs.
