Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large (50g) egg
  • 2 tsp (10ml) vanilla extract
  • 2 3/4 cups (340g) all-purpose flour
  • 2 tbsp (16g) cornstarch
  • 1/2 tsp (3g) salt
  • 2 cups (250g) powdered sugar
  • 2 tbsp (30ml) heavy cream
  • 1 tsp (5ml) vanilla extract
  • Food coloring
  • 2 tbsp (15g) sugar sprinkles

Instructions:

  1. Beat the softened butter and granulated sugar in a large bowl until pale and fluffy (about 2-3 minutes).
  2. Add the egg and vanilla extract, beating on medium speed until fully combined and smooth.
  3. In a separate bowl, whisk together the flour, cornstarch, and salt.
  4. Gradually add the dry ingredients to the wet mixture on low speed, mixing just until the flour streaks disappear.
  5. Divide the dough into two discs, flatten slightly, wrap in plastic wrap, and freeze for 30 minutes.
  6. Roll out the chilled dough, cut into Halloween shapes using cookie cutters, and bake for 10 minutes.
  7. Allow cookies to cool on a wire rack.
  8. Mix powdered sugar, heavy cream, and vanilla extract to create frosting; add food coloring as desired.
  9. Pipe frosting onto cookies and finish with sugar sprinkles.
