Ingredients:
- 1 cup (225g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 1 large (50g) egg
- 2 tsp (10ml) vanilla extract
- 2 3/4 cups (340g) all-purpose flour
- 2 tbsp (16g) cornstarch
- 1/2 tsp (3g) salt
- 2 cups (250g) powdered sugar
- 2 tbsp (30ml) heavy cream
- 1 tsp (5ml) vanilla extract
- Food coloring
- 2 tbsp (15g) sugar sprinkles
Instructions:
- Beat the softened butter and granulated sugar in a large bowl until pale and fluffy (about 2-3 minutes).
- Add the egg and vanilla extract, beating on medium speed until fully combined and smooth.
- In a separate bowl, whisk together the flour, cornstarch, and salt.
- Gradually add the dry ingredients to the wet mixture on low speed, mixing just until the flour streaks disappear.
- Divide the dough into two discs, flatten slightly, wrap in plastic wrap, and freeze for 30 minutes.
- Roll out the chilled dough, cut into Halloween shapes using cookie cutters, and bake for 10 minutes.
- Allow cookies to cool on a wire rack.
- Mix powdered sugar, heavy cream, and vanilla extract to create frosting; add food coloring as desired.
- Pipe frosting onto cookies and finish with sugar sprinkles.
