Ingredients:

  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups semi-sweet chocolate chips
  • 1.5 quarts vanilla ice cream, slightly softened
  • 1/4 cup mini chocolate chips

Instructions:

  1. Cream the softened butter and both sugars until pale and fluffy (about 3 minutes).
  2. Beat in the eggs and vanilla extract.
  3. In a separate bowl, whisk the flour, baking soda, and salt; gradually incorporate the dry ingredients into the wet mixture.
  4. Fold in the semi-sweet chocolate chips.
  5. Scoop rounded tablespoons of dough onto parchment-lined baking sheets, spacing them 2 inches apart.
  6. Bake at 350°F (175°C) for 9–11 minutes. Remove when edges are just set and golden, but centers still look slightly underbaked.
  7. Allow cookies to cool completely on the pan.
  8. Place the cooled cookies on a tray in the freezer for 30 minutes to flash-freeze.
  9. Scoop a generous portion of softened vanilla ice cream onto the flat side of one frozen cookie, sprinkle with mini chocolate chips, and press another cookie on top to form a sandwich.
  10. Freeze the assembled sandwiches for at least 1.5 hours before serving to set.
