Ingredients:
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups semi-sweet chocolate chips
- 1.5 quarts vanilla ice cream, slightly softened
- 1/4 cup mini chocolate chips
Instructions:
- Cream the softened butter and both sugars until pale and fluffy (about 3 minutes).
- Beat in the eggs and vanilla extract.
- In a separate bowl, whisk the flour, baking soda, and salt; gradually incorporate the dry ingredients into the wet mixture.
- Fold in the semi-sweet chocolate chips.
- Scoop rounded tablespoons of dough onto parchment-lined baking sheets, spacing them 2 inches apart.
- Bake at 350°F (175°C) for 9–11 minutes. Remove when edges are just set and golden, but centers still look slightly underbaked.
- Allow cookies to cool completely on the pan.
- Place the cooled cookies on a tray in the freezer for 30 minutes to flash-freeze.
- Scoop a generous portion of softened vanilla ice cream onto the flat side of one frozen cookie, sprinkle with mini chocolate chips, and press another cookie on top to form a sandwich.
- Freeze the assembled sandwiches for at least 1.5 hours before serving to set.
