Ingredients:

  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar, packed
  • 1 large egg (approx. 50g)
  • 1 tsp (5ml) vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt

Instructions:

  1. Whisk the melted butter with the granulated sugar and brown sugar in a large mixing bowl until the mixture is smooth and the sugar has begun to dissolve.
  2. Beat in the egg and vanilla extract, stirring vigorously for about 30 seconds until the batter becomes glossy and slightly pale.
  3. Sift in the flour, baking soda, and salt. Using a spatula, fold the ingredients together just until no streaks of flour remain.
  4. Scoop rounded tablespoons of dough onto a baking sheet lined with parchment paper or a silicone mat, spacing them 2 inches apart.
  5. Bake at 350°F (175°C) for 12–15 minutes until the edges are deep golden brown (mahogany) and the centers look slightly soft.
  6. Remove from oven and allow cookies to cool on the sheet to firm up and achieve a crispy texture.
