Ingredients:
- 1/2 cup (115g) unsalted butter, melted and slightly cooled
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) brown sugar, packed
- 1 large egg (approx. 50g)
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
Instructions:
- Whisk the melted butter with the granulated sugar and brown sugar in a large mixing bowl until the mixture is smooth and the sugar has begun to dissolve.
- Beat in the egg and vanilla extract, stirring vigorously for about 30 seconds until the batter becomes glossy and slightly pale.
- Sift in the flour, baking soda, and salt. Using a spatula, fold the ingredients together just until no streaks of flour remain.
- Scoop rounded tablespoons of dough onto a baking sheet lined with parchment paper or a silicone mat, spacing them 2 inches apart.
- Bake at 350°F (175°C) for 12–15 minutes until the edges are deep golden brown (mahogany) and the centers look slightly soft.
- Remove from oven and allow cookies to cool on the sheet to firm up and achieve a crispy texture.
