Ingredients:
- 1 lb fresh green beans, trimmed to 3-inch lengths
- 4 cloves garlic, smashed
- 3 sprigs fresh dill
- 1 cup white distilled vinegar
- 1 cup filtered water
- 1 tbsp kosher salt
- 1 tbsp granulated sugar
- 1 tsp black peppercorns
- 1 tsp mustard seeds
Instructions:
- Wash the green beans thoroughly and trim the stem ends. Cut the beans into uniform 3-inch pieces and pack them tightly into two clean wide-mouth pint jars.
- In a small saucepan over medium-high heat, combine the white distilled vinegar, filtered water, kosher salt, and granulated sugar.
- Stir constantly until the salt and sugar are completely dissolved and the brine reaches a rolling boil, then remove from heat immediately.
- Divide the smashed garlic, fresh dill sprigs, black peppercorns, and mustard seeds evenly between the two jars of beans.
- Carefully pour the boiling brine over the beans, leaving approximately 1/2 inch of headspace at the top of each jar.
- Seal the lids tightly and allow the jars to cool on the counter for 30 minutes.
- Transfer the jars to the refrigerator and chill for 24 hours to allow flavors to penetrate and maintain crispness.
