Ingredients:

  • 1 lb fresh green beans, trimmed to 3-inch lengths
  • 4 cloves garlic, smashed
  • 3 sprigs fresh dill
  • 1 cup white distilled vinegar
  • 1 cup filtered water
  • 1 tbsp kosher salt
  • 1 tbsp granulated sugar
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds

Instructions:

  1. Wash the green beans thoroughly and trim the stem ends. Cut the beans into uniform 3-inch pieces and pack them tightly into two clean wide-mouth pint jars.
  2. In a small saucepan over medium-high heat, combine the white distilled vinegar, filtered water, kosher salt, and granulated sugar.
  3. Stir constantly until the salt and sugar are completely dissolved and the brine reaches a rolling boil, then remove from heat immediately.
  4. Divide the smashed garlic, fresh dill sprigs, black peppercorns, and mustard seeds evenly between the two jars of beans.
  5. Carefully pour the boiling brine over the beans, leaving approximately 1/2 inch of headspace at the top of each jar.
  6. Seal the lids tightly and allow the jars to cool on the counter for 30 minutes.
  7. Transfer the jars to the refrigerator and chill for 24 hours to allow flavors to penetrate and maintain crispness.
