Ingredients:

  • 225 g unsalted butter, softened
  • 200 g granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 10 ml pure vanilla extract
  • 340 g all-purpose flour
  • 5 g baking soda
  • 3 g salt
  • 50 g sparkling sugar (or granulated)

Instructions:

  1. Beat the softened butter and sugar together on medium-high speed until the mixture looks pale and fluffy (about 2–3 minutes). Add the whole egg, the extra egg yolk, and the vanilla extract. Mix until fully combined and velvety.
  2. Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture on low speed. Mix until the flour streaks disappear; avoid overmixing.
  3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
  4. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper. Scoop rounded tablespoons of dough, roll them into 1-inch balls, and roll each ball in the sparkling sugar. Bake for 8–10 minutes.
