Ingredients:
- 225 g unsalted butter, softened
- 200 g granulated sugar
- 1 large egg
- 1 large egg yolk
- 10 ml pure vanilla extract
- 340 g all-purpose flour
- 5 g baking soda
- 3 g salt
- 50 g sparkling sugar (or granulated)
Instructions:
- Beat the softened butter and sugar together on medium-high speed until the mixture looks pale and fluffy (about 2–3 minutes). Add the whole egg, the extra egg yolk, and the vanilla extract. Mix until fully combined and velvety.
- Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture on low speed. Mix until the flour streaks disappear; avoid overmixing.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
- Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper. Scoop rounded tablespoons of dough, roll them into 1-inch balls, and roll each ball in the sparkling sugar. Bake for 8–10 minutes.
