Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large (50g) egg
- 2 tsp (10ml) pure vanilla extract
- 2 ¾ cups (340g) all-purpose flour
- 1 tsp (5g) baking powder
- ½ tsp (3g) salt
- 2 cups (240g) powdered sugar, sifted
- 2 tbsp (30ml) milk
- ½ tsp (2.5ml) vanilla extract
- Gel food coloring
Instructions:
- Cream together the softened butter and granulated sugar on medium-high speed until the mixture is pale and fluffy.
- Beat in the egg and vanilla extract until fully emulsified.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients on low speed, mixing only until flour streaks disappear and a soft dough forms.
- Preheat oven to 350°F (175°C). Roll dough to ¼ inch thickness on a floured surface.
- Cut out spooky shapes and place on a parchment-lined baking sheet.
- Bake for 8–10 minutes until edges are barely golden. Let cool completely on the pan.
- Whisk powdered sugar, milk, and vanilla into a smooth paste. Divide into bowls and add gel food coloring.
- Pipe the colored icing onto cooled cookies to create ghosts, pumpkins, or other creepy designs.
