Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large (50g) egg
  • 2 tsp (10ml) pure vanilla extract
  • 2 ¾ cups (340g) all-purpose flour
  • 1 tsp (5g) baking powder
  • ½ tsp (3g) salt
  • 2 cups (240g) powdered sugar, sifted
  • 2 tbsp (30ml) milk
  • ½ tsp (2.5ml) vanilla extract
  • Gel food coloring

Instructions:

  1. Cream together the softened butter and granulated sugar on medium-high speed until the mixture is pale and fluffy.
  2. Beat in the egg and vanilla extract until fully emulsified.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry mixture to the wet ingredients on low speed, mixing only until flour streaks disappear and a soft dough forms.
  5. Preheat oven to 350°F (175°C). Roll dough to ¼ inch thickness on a floured surface.
  6. Cut out spooky shapes and place on a parchment-lined baking sheet.
  7. Bake for 8–10 minutes until edges are barely golden. Let cool completely on the pan.
  8. Whisk powdered sugar, milk, and vanilla into a smooth paste. Divide into bowls and add gel food coloring.
  9. Pipe the colored icing onto cooled cookies to create ghosts, pumpkins, or other creepy designs.
