Ingredients

  • 1 box white cake mix
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup water
  • ¾ cup maraschino cherry juice reserved from cherries

For the Cherry Buttercream Icing

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maraschino cherry juice reserved from cherries
  • 1 teaspoon vanilla extract

For Cherry Chip Cake

  • Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Prepare two round cake pans by spraying them with non-stick cooking spray. Optionally, you can line the bottom of the pans with parchment paper for easier removal of the cakes later.
  • Prepare the Cake Batter:
  • In a large mixing bowl, combine the white cake mix, vegetable oil, eggs, vanilla extract, water, and 3/4 cup of maraschino cherry juice (reserved from the cherries).
  • Use an electric mixer to beat the ingredients together on medium speed until well combined and smooth.
  • Divide and Pour Batter:
  • Once the batter is thoroughly mixed, divide it evenly between the prepared cake pans.
  • Use a spatula to smooth the tops of the batter in each pan, ensuring an even surface for baking.
  • Bake the Cakes:
  • Place the cake pans in the preheated oven and bake for 24-29 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • Remove the cakes from the oven and let them cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.

For Cherry Buttercream Icing:

  • Prepare the Buttercream:
  • In a mixing bowl, beat the softened unsalted butter until creamy and smooth using an electric mixer.
  • Gradually add the powdered sugar, one cup at a time, beating well after each addition until the mixture is light and fluffy.
  • Add Liquid Ingredients:
  • Add the milk, maraschino cherry juice, and vanilla extract to the buttercream mixture.
  • Continue to beat the icing on medium speed until it reaches a smooth and spreadable consistency. If needed, adjust the consistency by adding more milk or powdered sugar.
  • Frost the Cake:
  • After the cake layers have cooled completely, place one layer on a plate or cake stand.
  • Spread a generous layer of cherry buttercream icing over the top of the cake layer, using a spatula to smooth it evenly.
  • Carefully place the second cake layer on top of the icing.
  • Frost the Entire Cake:
  • Use the remaining cherry buttercream icing to frost the top and sides of the cake, covering it completely with a thick layer of frosting.
  • Use a spatula or cake smoother to achieve a smooth and even finish on the icing.
