Ingredients
  

For Cake

  • 1 box devil's food cake mix
  • 3 large eggs
  • ¼ cup canola oil
  • 1 teaspoon almond extract
  • 1 can 21 ounces cherry pie filling

Homemade Cherry Filling

  • 2 cups 320 grams fresh cherries, pitted and roughly chopped (or frozen cherries with additional cornstarch)
  • ½ cup 99 grams granulated sugar
  • 1 ½ tablespoons cornstarch
  • 1 tablespoon lemon juice
  • cup water

For Chocolate Glaze

  • 3 tablespoons butter
  • 2 tablespoons corn syrup
  • ¾ cup semi-sweet chocolate chips
  • ¼ teaspoon vanilla extract
  • Optional garnish: Maraschino Cherries

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a bundt pan or a 9x13-inch baking pan.
  • If using a bundt pan, ensure it is well greased to prevent sticking.

Mixing the Cake

  • In a large mixing bowl, combine the devil's food cake mix, eggs, canola oil, and almond extract.
  • Beat the mixture on medium speed for about 2 minutes, or until well combined and smooth.
  • Gently fold in the cherry pie filling until evenly distributed throughout the batter.

Baking the Cake

  • Pour the cake batter into the prepared pan, ensuring it is spread out evenly.
  • Place the pan in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • If using a bundt pan, allow the cake to cool in the pan for about 15 minutes before removing it onto a wire rack to cool completely. If using a baking pan, you can leave the cake to cool in the pan.

Making the Cherry Pie Filling

  • If using fresh cherries, pit and roughly chop them. If using frozen cherries, ensure they are thawed.
  • In a saucepan, combine the cherries, granulated sugar, cornstarch, lemon juice, and water.
  • Stir the mixture over medium heat until it comes to a boil.
  • Reduce the heat to low and simmer for about 5 minutes, stirring occasionally, until the cherries soften and the mixture thickens.
  • Take the cherry filling off the heat and allow it to cool down completely. You can refrigerate it if not using immediately.

Preparing the Chocolate Glaze

  • In a small saucepan, heat the butter on low until it melts completely.
  • Stir in the corn syrup until well combined.
  • Add the semi-sweet chocolate chips and continue to stir until they are completely melted and the mixture is smooth.
  • Take the saucepan off the heat and mix in the vanilla extract.
  • Let the chocolate glaze cool slightly before using.

Assembling the Cake

  • After allowing the cake to cool completely, transfer it onto a serving plate or cake stand.
  • Drizzle the chocolate glaze over the top of the cake, allowing it to drip down the sides.
  • If desired, garnish the cake with maraschino cherries for an extra touch of flavor and decoration.
