Ingredients
  

  • 1 cup yellow cornmeal fine ground for a creamy texture
  • 1 cup all-purpose flour
  • 2 ½ teaspoons baking powder
  • 1 teaspoon kosher salt
  • cup white sugar
  • ¾ cup whole milk or buttermilk can substitute with plant-based milk like oat or almond milk
  • ¼ cup water
  • 2 large eggs
  • 2 tablespoons unsalted butter melted
  • ½ cup pork fat rendered lard, bacon grease, or vegetable oil (for frying)
  • Extra butter and maple syrup for serving

Instructions
 

  • Mix Dry Ingredients: In a large bowl, whisk together the yellow cornmeal, all-purpose flour, baking powder, kosher salt, and sugar until well combined.
  • Prepare Wet Ingredients: In another bowl, beat the eggs. Add milk, water, and melted butter to the eggs, and whisk together until fully combined.
  • Combine Ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, making sure not to overmix.
  • Heat Oil: In a large cast-iron or non-stick skillet, heat 2 tablespoons of your chosen frying fat (vegetable oil, bacon grease, etc.) over medium heat until it shimmers.
  • Fry Johnny Cakes: Using a 1/4 cup measuring cup, scoop the batter and pour it into the hot skillet. Cook each cake for about 4-5 minutes on one side, or until the edges turn golden brown. Flip and cook for another 4-5 minutes until the other side is golden brown as well.
