Ingredients
  

For Salmon Cakes

  • 1 lb fresh salmon fillets or 14-15 oz canned salmon
  • 1 cup Panko breadcrumbs or crushed crackers
  • 2 large eggs
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped bell pepper optional
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce optional
  • Salt and pepper to taste
  • Fresh parsley or dill optional

For Frying

  • Oil for frying vegetable or olive oil
  • Lemon wedges for serving

Instructions
 

  • Prepare the Salmon: If using fresh salmon, bake it at 425°F for 12-15 minutes or until fully cooked. Flake the salmon into small pieces, removing any skin or bones. For canned salmon, simply drain and flake it.
  • Make the Mixture: In a large bowl, combine the salmon, breadcrumbs, beaten eggs, finely chopped onion, and bell pepper. Add mayonnaise, mustard, Worcestershire sauce, and fresh herbs. Season with salt, pepper, and Old Bay seasoning (if using). Mix everything together until the ingredients are well incorporated.
  • Shape the Patties: With your hands, form the mixture into small round patties. If the mixture feels too wet, add a little more breadcrumbs to help bind it.
  • Chill (Optional): For firmer patties, refrigerate the mixture for about 15 minutes before cooking.
  • Fry the Patties: Heat a tablespoon of oil in a large skillet over medium heat. Once the oil is hot, add the patties to the pan, being careful not to overcrowd them. Cook for about 3-4 minutes on each side until they turn golden brown and crispy.
  • Serve: Once cooked, remove the patties from the skillet and let them rest on paper towels to drain excess oil. Serve with lemon wedges, tartar sauce, or over a bed of fresh greens for a light meal.

Notes

Note: Fresh salmon works best for this recipe, but you can also use leftover cooked salmon, a 13 to 14-ounce can of drained salmon, or two 4-ounce salmon pouches. If the mixture feels too wet to form into patties, mix in more breadcrumbs. If it seems too dry, stir in an extra tablespoon of mayonnaise.
