Grinding
Grind the cinnamon stick in a spice grinder until fine.
Sit on one side.
Add rice flour
Place the rice flour in a large bowl.
Add some dry ingredients
Make a well in the middle and add cinnamon, sugar, shortening, salt, baking powder, baking soda, and eggs.
Then mix
Stir to mix.
Add milk
Gradually add enough milk to make a soft dough that will come together in a ball like tortilla masa.
Texture
It’s easiest to get the texture right if you mix it with your hands.
Optional
Sprinkle grated coconut over the cookies for extra flavor and texture.
Dough
Form the dough into 16 balls.
Place on Baking sheets
Place on wax paper lined baking sheets.
Press each one down with 2 fingers, laying flat to make 2 ridges in the dough.
Add sugar or sprinkle
Now Sprinkle with pink sugar.
Now bake cookie
Bake at 350℉ (180℃) until well browned, about 18 to 20 minutes.
Cool down
Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
