Ingredients
  

Graham Cracker Cookies with Frosting Ingredients:

  • 18 graham cracker sheets
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • 1 cup unsalted butter at cool room temperature
  • 1 ½ cups brown sugar packed
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract

For the Frosting:

  • 1 cup unsalted butter at room temperature
  • 4 ½ cups confectioner’s sugar sifted
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • 4-5 Tablespoons heavy cream or whole milk
  • Crushed graham crackers for garnish

Instructions
 

Prepare the Cookies:

  • Crush the graham crackers into crumbs using a food processor or blender.
  • In a large bowl, whisk together graham cracker crumbs, flour, baking soda, baking powder, salt, and cinnamon.
  • In another bowl, beat together butter, brown sugar, and granulated sugar until creamy. Add eggs and vanilla extract, mixing until combined.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Chill the dough for at least one hour.

Bake the Cookies:

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll the chilled dough into balls and place them on the baking sheet.
  • Bake for 10-12 minutes, until set around the edges but still soft in the center. Let cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Make the Frosting:

  • Beat butter until creamy, then gradually add confectioner’s sugar, vanilla extract, salt, and heavy cream or milk until the desired consistency is reached.

Frost the Cookies:

  • Once the cookies are cooled, frost them with the vanilla buttercream frosting.
  • Garnish with crushed graham crackers.
