Preheat the Oven Preheat your oven to 350º Fahrenheit. Line baking sheets with non-stick baking mats or parchment paper.
Prepare Dry Ingredients In a medium bowl, whisk together flour, oats, baking powder, baking soda, and salt.
Cream Wet Ingredients In the bowl of a stand mixer, cream together sugars, shortening, butter, honey, and vanilla until the mixture is grainy but evenly mixed.
Incorporate Eggs Add the eggs to the creamed mixture and mix well.
Combine Dry and Wet Mixtures Gradually add the dry ingredients to the wet ingredients in the stand mixer bowl. Mix until everything is well combined, scraping down the sides of the bowl as needed.
Add Chocolate Mix in all the semi-sweet and milk chocolate chips, then add half of the chocolate chunks.
Shape and Place Dough Use a 2" cookie scoop to portion out the dough, making each dough ball about 70 grams (¼ cup). Place the dough balls 3" apart on the prepared baking sheets.
Add Extra Chocolate Chunks Press a few more chocolate chunks from the remaining ½ cup onto the tops of each dough ball.
Bake Bake the cookies for 11-13 minutes, or until they are set. Adjust baking time if making smaller cookies.
Cool and Store Allow the cookies to cool on the baking sheet for 3 minutes before transferring them to a wire rack to cool completely. Store the cooled cookies in an airtight container at room temperature.
