Ingredients
  

For the Cake:

  • Plant-Based Milk: Choose soy or almond milk 1 cup. Ensure it's unsweetened for the right balance.
  • Lemon Juice: 1 tablespoon for a hint of citrus flavor. It also reacts with the baking agents.
  • All-Purpose Flour: 2 cups for the base. It provides structure to the cake.
  • Baking Powder: 1 tablespoon to help the cake rise and become fluffy.
  • Salt: ¼ teaspoon to enhance the overall flavor.
  • Vegan Butter: ½ cup melted. It makes the cake rich and moist, adding delicious flavor and a soft texture.
  • Granulated Sugar: 1 cup for sweetness. Choose organic sugar to ensure it stays vegan-friendly.

Optional Glaze:

  • Powdered Sugar: 1 cup for the glaze. It makes it sweet and smooth.
  • Plant-Based Milk or Lemon Juice: 2 tablespoons for the glaze. Adjust for desired thickness.

Instructions
 

Preheat the Oven:

  • Set your oven to 350°F (180°C).
  • Grease a 9x5-inch loaf pan with a light coating of vegan butter or oil.

Prepare the Milk Mixture:

  • In a small bowl, whisk together 1 cup of plant-based milk and 1 tablespoon of lemon juice.
  • Set aside to let it thicken slightly.

Combine Dry Ingredients:

  • In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon baking powder, and ¼ teaspoon salt.
  • Mix well to ensure even distribution.

Mix Wet Ingredients:

  • In another bowl, blend the melted vegan butter and 1 cup of granulated sugar until smooth.
  • Gradually add the plant-based milk mixture, stirring continuously for a consistent texture.

Create the Batter:

  • Combine the ingredients in a dry bowl.
  • Stir gently until the ingredients are fully incorporated, forming a smooth batter.

Bake the Cake:

  • Pour the batter into a greased pan.
  • Use a spatula to smooth and level the surface for an even finish.
  • Place the pan in the preheated oven and bake for around 40 minutes or until a toothpick inserted into the center comes out clean.

Prepare the Glaze (Optional):

  • In a separate bowl, whisk together 1 cup of powdered sugar and 2 tablespoons of plant-based milk or lemon juice until you achieve a smooth consistency.

Glaze the Cake:

  • Once the cake has cooled, drizzle the glaze evenly over the top.
  • Allow the glaze to set for at least 15 minutes before slicing.
