Ingredients
  

For The Cake:

  • 4 ounces semi-sweet chocolate
  • 2 ounces bittersweet chocolate
  • 125 mL 1/2 cup butter
  • 250 mL 1 cup black rum
  • 4 eggs
  • 125 mL 1/2 cup granulated sugar
  • 125 mL 1/2 cup brown sugar
  • 250 mL 1 cup flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 125 mL 1/2 cup cocoa
  • ½ teaspoon salt

For the Rum Sauce:

  • 125 mL 1/2 cup butter
  • 60 mL 1/4 cup black rum
  • 60 mL 1/4 cup granulated sugar
  • 60 mL 1/4 cup more black rum

Instructions
 

For The Cake:

  • Preheat Oven: Heat the oven to 350°F. Butter and flour a large loaf pan.
  • Chocolate Mix: In a double boiler or microwave, melt semi-sweet chocolate, bittersweet chocolate, 1/2 cup butter, and 1 cup black rum until smooth.
  • Sugar Whisk: Whisk 1/2 cup granulated sugar and 1/2 cup brown sugar into the chocolate mixture.
  • Egg Addition: Add eggs one at a time, whisking well after each addition.
  • Dry Ingredients: In another bowl, sift together 1 cup flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 cup cocoa, and 1/2 teaspoon salt.
  • Gradual Mixing: Alternately add the sifted dry ingredients and a mixture of coffee and rum to the wet ingredients, mixing gradually.
  • Baking: Pour the batter into the prepared pan and bake for about 45 minutes or until a toothpick comes out clean.

For the Rum Sauce:

  • Sauce Preparation: While the cake bakes, make the rum sauce by boiling 1/2 cup butter, 1/4 cup sugar, and 1/4 cup rum. Remove from heat.
  • Cake Finishing: Once the cake is done, poke holes all over it and brush with the prepared rum sauce.
  • Weighted Cooling: Place another loaf pan on top of the cake while it cools to enhance flavors, weighted down.
  • Serving: After cooling, flip the cake onto a serving dish. Serve alone or with whipped cream, ice cream, or hot fudge sauce.
