Date Cookies Recipe

I love these Date cookies recipe. I even shared the recipe in my holidaycards. They're wonderfully rich, buttery, chewy, and surprisingly easy to whipup.

Ingredients
  

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon Kosher salt
  • 1 cup butter at room temperature
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 3 eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups roughly chopped toasted pecans
  • 1 ½ cups chopped pitted dates

Instructions
 

Preheat Oven:

  • Preheat your oven to 350ºF (175ºC). Line baking sheets with parchment paper.

Prepare Dry Ingredients:

  • In a medium bowl, combine the flour, baking soda, and Kosher salt. Set aside.

Cream Butter and Sugars:

  • Using an electric mixer, beat the butter, granulated sugar, and brown sugar together until well combined and creamy (about 2 minutes).

Add Eggs and Vanilla:

  • Add the eggs one at a time, beating well after each addition. Then, mix in the vanilla extract.

Incorporate Flour Mixture:

  • Gradually add the flour mixture to the wet ingredients, mixing on low speed until fully incorporated.

Stir in Pecans and Dates:

  • Fold in the chopped toasted pecans and chopped dates until evenly distributed throughout the dough.

Chill the Dough (Optional):

  • If time permits, cover the dough with plastic wrap and chill in the refrigerator for at least 2 hours or overnight. This helps enhance the thickness and chewiness of the cookies.

Scoop and Bake:

  • Use a spring-loaded cookie scoop to drop rounded dough portions onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Bake the Cookies:

  • Bake in the preheated oven for 8-11 minutes, or until the edges are golden brown and the cookies are puffed.

Cool and Serve:

  • Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely before serving.
