Italian Florentine Cookie Recipe is thin, crunchy lace cookies made from chopped almonds, orange zest, and vanilla.

Ingredients
  

  • 1 cup 145 grams raw almonds or almond flour
  • 3 tablespoons all-purpose flour
  • 2 tablespoons dried oranges optional
  • ¾ cup 140 grams granulated sugar
  • 2 tablespoons heavy cream
  • 2 tablespoons light corn syrup or light agave syrup
  • 5 tablespoons 71 grams unsalted butter
  • ½ teaspoon vanilla extract
  • 1 ¼ pounds 567 grams dark or milk chocolate, cut into small chunk

Instructions
 

Preparation

  • o Preheat oven to 325°F (163°C).
  • o Line a 17 x 12 inch baking sheet with parchment paper or a silicone mat.

Peel the Almonds

  • o Boil a saucepan of water.
  • o Add almonds and boil for 1 minute.
  • o Drain and rinse with cold water.
  • o Rub the almonds in a towel to remove peels and dry them well.

Chop the Almonds

  • o Pulse almonds in a food processor or blender until finely chopped.
  • o Mix chopped almonds with flour and orange peel in a bowl.

Prepare the Mixture

  • o In a small saucepan, combine sugar, heavy cream, corn syrup, and butter.

  • o Cook over medium heat, stirring occasionally, until it boils and sugar dissolves.
  • o Simmer for 1 minute, then remove from heat.
  • o Add vanilla and mix into the almond mixture.
  • o Let cool for 15 minutes.

Form the Cookies

  • o Use a teaspoon to scoop and roll dough into balls.
  • o Place dough balls 6 inches apart on the baking sheet.

Bake the Cookies

  • o Bake for 10-12 minutes until golden brown.

  • o If cookies merge, separate them with a knife while still hot.
  • o Cool on the baking sheet for 2 minutes, then transfer to a cooling rack.

Add Chocolate

  • o Melt chocolate in the microwave in 10-second increments, stirring in between.

  • o Spread chocolate on one side of a cooled cookie, sandwich with another cookie.
  • o Optionally, drizzle chocolate on top by snipping a corner of a zip-top bag filled with melted chocolate.

Store the Cookies

  • o Cool completely and store in an airtight container in the refrigerator for up to 2 weeks.
