  • 1 cup (145 grams) raw almonds or almond flour
  • 3 tablespoons all-purpose flour
  • 2 tablespoons dried oranges (optional)
  • ¾ cup (140 grams) granulated sugar
  • 2 tablespoons heavy cream
  • 2 tablespoons light corn syrup or light agave syrup
  • 5 tablespoons (71 grams) unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1 ¼ pounds (567 grams) dark or milk chocolate, cut into small chunks

Preparation

    • Preheat oven to 325°F (163°C).
    • Line a 17 x 12 inch baking sheet with parchment paper or a silicone mat.

Peel the Almonds

    • Boil a saucepan of water.
    • Add almonds and boil for 1 minute.
    • Drain and rinse with cold water.
    • Rub the almonds in a towel to remove peels and dry them well.

Chop the Almonds

    • Mix chopped almonds with flour and orange peel in a bowl.

Prepare the Mixture

    • Cook over medium heat, stirring occasionally, until it boils and sugar dissolves.
    • Simmer for 1 minute, then remove from heat.
    • Add vanilla and mix into the almond mixture.
    • Let cool for 15 minutes.

    • Use a teaspoon to scoop and roll dough into balls.
    • Place dough balls 6 inches apart on the baking sheet.

    • If cookies merge, separate them with a knife while still hot.
    • Cool on the baking sheet for 2 minutes, then transfer to a cooling rack.

    • Melt chocolate in the microwave in 10-second increments, stirring in between.
    • Spread chocolate on one side of a cooled cookie, sandwich with another cookie.
    • Optionally, drizzle chocolate on top by snipping a corner of a zip-top bag filled with melted chocolate.

    • Cool completely and store in an airtight container in the refrigerator for up to 2 weeks.
