Ingredients

  • Granulated Sugar: A must-have for sweetness. Use 1 ½ cups for this recipe.
  • Butter: Essential for a rich texture. “For the best flavor stick to real butter,” as suggested by Katarina Frank. The recipe calls for ¾ cup (1 ½ sticks).
  • Milk: Any milk works whether it's 2%, whole, or a non-dairy alternative.
  • Instant Lemon Pudding Mix: Adds a tangy citrus flavor. Use a small 3.4 oz box for the perfect taste.
  • Quick Oats: Best for no-bake cookies due to their soft texture. You’ll need 3 ½ cups.
  • Vanilla Extract: Enhances the flavor. For extra lemony cookies add a drop of lemon extract but use sparingly to avoid overpowering the taste.

Instructions

Combine Wet Ingredients

  • In a large saucepan, add 1 ½ cups of granulated sugar, ¾ cup (1 ½ sticks) of butter, and ½ cup of milk. Place the saucepan over medium heat and stir occasionally until the butter melts completely and the mixture is well combined.

Boil the Mixture

  • Once the mixture is melted, bring it to a boil. Let it boil for 5 minutes while stirring to ensure it doesn’t stick to the bottom of the pan. This step helps create the right consistency for the cookies.

Add Flavoring

  • Remove the saucepan from heat. Add 1 teaspoon of vanilla extract and whisk in a 3.4 oz box of instant lemon pudding mix. Stir until the mixture is smooth and the pudding is fully dissolved.

. Mix in the Oats

  • Gradually stir in 3 ½ cups of quick oats. Ensure the oats are evenly coated with the lemon mixture, creating a thick and cohesive dough.

Shape the Cookies

  • Line a cookie sheet with wax paper. Use a spoon to drop portions of the mixture onto the wax paper. Flatten each portion slightly to give them a cookie shape.

Cool and Store

  • Allow the cookies to cool completely on the wax paper. Once set, transfer them to an airtight container. Store at room temperature for a soft texture or in the refrigerator for a chilled, firmer bite.

Enjoy these tangy, chewy cookies as a refreshing snack or dessert!
