These cookies are even better than the Panera version. They are soft and chewy with plenty of crispy bites on the edges. They have the perfect amount of lemon flavor! This Panera lemon drop cookie recipe is very easy to make with just a few basic ingredients. My first attempt at replicating Panera’s cookie prowess came from my famous Panera Lemon Drop Cookie recipe. Please don’t make them unless you plan to eat the whole batch in one go.

Ingredients

All we need

  • 3 cups all-purpose flour (360g)
  • 1 tablespoon cornstarch (10g)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, melted (230g)
  • 1 cup brown sugar (200g)
  • ½ cup white sugar (100g)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup semisweet chocolate chunks (150g)
  • 1 cup milk chocolate, finely chopped (160g)
How to Make

Measure all ingredients before starting.

Step1

Whisk together the flour, salt, and baking soda until blended, then set aside.

Step2

Cream the butter and sugar until light and fluffy, about 1 minute.

Step3

Add the eggs, lemon juice,lemon extract, and vanilla extract along with ½ cup of the flour mixture and beat to combine.

Step4

Mix in the flour mixture, just until combined, then stir in the white chocolate chips on low speed until they are evenly distributed.

Step5

Pour cookie dough onto cookie sheet, placing four balls on each 11×17-inch cookie sheet. This will give you a very large cookie.

Step6

Bake at 350 F, or until the edges of the cookies are light golden brown.

Step7

Decorate the cookie and dust the cookie with powdered sugar and let it cool on a wire rack.
