Today, my friend Lexy from The Proper Pinwheel is sharing a delicious cast iron sugar cookie recipe perfect for those vintage molds you stumble upon in antique stores.

Lexy stumbled across an adorable cactus cast iron mold a while back and was inspired to make something special. She’s been experimenting with different recipes, but it was the sugar cookies that stole the show, especially after featuring them in her cactus-themed gift wrap DIY.

This recipe is a treasure for those looking for a delicious sugar cookie recipe that holds its shape beautifully when baked in cast iron pans. Whether you’re a seasoned baker or just starting, these cookies are sure to impress your taste buds and guests alike.

But my previous easy  Amish Raisin Filled Cookie Recipe with few ingredients is also very delicious.

Ingredients Cast Iron Cookie Mold Recipes
  • 1 cup softened butter
  • 2/3 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 3 cups all-purpose flour (you can substitute 1 cup wheat flour for a healthier version)
  • 1/4 teaspoon salt
Instructions:
  • Preheat your oven to 350°F.
  • In a large mixing bowl, cream together the butter and sugar. Add eggs (one at a time) and vanilla. Mix well.
  • In a separate bowl, combine flour and salt. Slowly stir into the butter and sugar mixture until well combined.
  • Press the cookie dough into cast-iron molds. Use a butter knife to shave off any excess dough to make the backs of the cookies as flat as possible.
  • Bake for 16 minutes.
  • Remove from the oven and cool for one minute before inverting onto a cooling rack. The cookies should slide right out of the mold. If not, keep the cast-iron pan upside down over a cooling rack for about ten minutes to allow more time to release.
  • Once completely cooled, frost as you see fit. You can pour a thin royal icing over each cookie and let it set.
  • Package these cookies up in clear bags and deliver them to all your cactus-loving friends.
