These cookies have a chocolate base, chocolate chips, and a soft, fudgy center. They’re perfect for chocolate lovers. The recipe is a rich twist on double chocolate chip cookies, filled with chocolate ganache. Carefully chosen ingredients keep the cookies soft and chewy, yet firm enough to hold the fudge filling.
While warm, the fudge filling is like chocolate lava, so handle with care. Once cooled, the filling becomes fudgy. Whether warm or cool, these cookies are delicious.

Soft and Gooey Chocolate Fudge Cookies Ingredients
- 115 grams (1/2 cup) unsalted butter, room temperature
- 90 grams (1/2 cup) brown sugar
- 50 grams (1/4 cup) caster or granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 140 grams (1 cup) plain or all-purpose flour
- 1/2 teaspoon baking soda
- 40 grams (1/2 cup) cocoa powder
- Pinch of salt, optional
- 1 tablespoon whole milk
- 100 grams (2/3 cup) dark or milk chocolate, roughly chopped, plus extra for decorating
Instructions
- Prepare Baking Trays: Line two baking trays with baking paper.
- Beat Butter and Sugars: In a large bowl, beat the butter and sugars with an electric mixer until combined.
- Add Vanilla and Egg: Add vanilla and egg to the mixture, beating for a minute until combined.
- Sift Dry Ingredients: Sift in flour, baking soda, cocoa powder, and salt . Mix until a chocolatey dough forms.
- Adjust Dough Consistency: If the dough is dry, add the milk, then stir in the chocolate chunks.
- Chill Dough: Chill the dough in the fridge for at least 30 minutes.
- Preheat Oven: Preheat oven to 180°C (350°F) or 160°C (320°F) for fan-forced.
- Shape Dough: Roll the dough into balls (about 1.5 tablespoons each) and place on the prepared trays.
- Bake: Bake for 10-11 minutes.
- Add Extra Chocolate: While still warm, place extra chocolate pieces on top of each cookie.
- Cool: Transfer cookies to a wire rack to cool completely.
