These cookies (Almond Joy cookies recipe) are a delightful mix of coconut, semi-sweet chocolate, and sliced almonds. You can bake them and pop them in the freezer for later. Plus, it’s super easy to halve the recipe if you don’t need as many. If you’re a coconut fan like me, feel free to add a bit extra to enhance the taste.

These small-batch Almond Joy Cookies perfectly combine coconut, semi-sweet chocolate, and chopped almonds. They are so good that I have to freeze them before eating the whole batch. As Sandra Lee said,Cookies are comforting to bake, and cookies are the sweetest part of comfort food.”

But my previous easy Nestle Toll House cookie recipe with a few ingredients is also very delicious.

INGREDIENTS

  • 1 1/8 cups all-purpose flour
  • 1 cup + 2 tablespoons
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup sweetened shredded coconut
  • 3/4 cup sliced almonds

INSTRUCTION

  • Preheat oven to 350°F.
  • In a small bowl, whisk together flour, baking soda, and salt. Set aside.
  • Using a mixer, cream together butter and sugars. Add vanilla and egg, mixing until just incorporated.
  • Slowly add the dry mixture to the creamed mixture, blending well. Stir in chocolate chips, coconut, and almonds.
  • Using a 1 1/2 tablespoon cookie scoop, drop rounded spoonfuls onto parchment-covered baking sheets.
  • Bake for 9-12 minutes.
  • Allow to cool for ten minutes on baking sheets before transferring to cookie cooling racks.
