- Butter – 100g
- Fine Sugar – 60g
- Egg Yolk – 1 Egg Yolk
- Egg White – 2 Tsp
- Cake Flour – 135g
- Corn Flour – 20g
- Vanilla – 1/2 Tsp
- 10 Biscoff cookies, crushed
InstructionÂ
This recipe is super easy to make, with no chill time required!
- Preheat oven to 375°F. Line two baking sheets with parchment paper or a slip mat.
- In a large bowl, whisk together the dry ingredients: all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Sit on one side.
- Using a stand mixer, cream the butter, cookie butter, and sugar.
- Add the cookie butter emulsion and vanilla to the eggs.
- Gradually add to all the dry ingredients.
- Shape the dough into ~8 large dough balls. Fold the ball in half, and then place the two halves back to back along the middle of the cookie. This gives the cookies a beautiful, rustic look.
- Place the cookies on the prepared baking sheet and bake for ~10-12 minutes or until the edges and tops look slightly golden.
- These cookies are very soft so it is important to let the cookies cool on the cookie sheet for 15 minutes and then transfer to a wire cooling rack to cool completely.
